Nancy's Zucchini Bread
4 eggs (free range of course)
2 cups sugar (Nancy uses less, about a cup)
1 cup oil (preferably a monosaturated oil like canola)
3 ½ cups flour (part whole wheat if desired)
1 ½ tsp baking soda
1 tsp baking powder
1 tsp cinnamon
½ tsp salt (optional)
1 tsp vanilla
2 cups grated zucchini (a good use for those baseball bat sized summer squash!)
1 cup of raisins and/or walnuts (optional)
Combine all together and bake for about 1 hr at 350 degrees in 2 greased loaf pans.
